Try these healthy and easy Thanksgiving recipes during your get-together this year.

Thanksgiving is just around the corner! Add these healthy recipes to your menu and your family and friends are sure to thank you. Recipes courtesy of Joy Ashby Cornthwaite, RD.

Turkey meatballs

Ingredients

  • 1-2 lbs. of lean ground turkey
  • 1/2 cup shredded Parmesan cheese
  • 5-10 gluten-free crackers, crushed
  • 2 small shallots
  • 1/2 celery stalk
  • 3 garlic cloves, minced
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 tsp rosemary
  • 1/4 cup olive oil
  • Your desired amount of onions, bell peppers, and celery
  • Salt and black pepper
  • Optional: 1/2 cup of turkey broth

Directions

  1. Combine all ingredients, except the turkey broth, into a large mixing bowl.
  2. Roll mixture into meatballs.
  3. Add meatballs into a large skillet with olive oil on medium heat.
  4. Cook approximately 5-7 minutes per side until browned on all sides.
  5. Once cooked, add the turkey broth. Cover and simmer until meatballs are fully cooked.
  6. Serve meatballs on a plate or skewer.

Kale Caesar Salad

Ingredients

  • Your desired amount of:
    • Romaine lettuce
    • Kale
    • Shredded Brussels sprouts
    • Green and/or purple cabbage
    • Radicchio
    • Parmesan cheese
    • Caesar dressing
    • Croutons
    • Salt and black pepper

Directions

  1. Combine all ingredients in a large bowl, mix, and serve.
