Turkey meatballs
Ingredients
- 1-2 lbs. of lean ground turkey
- 1/2 cup shredded Parmesan cheese
- 5-10 gluten-free crackers, crushed
- 2 small shallots
- 1/2 celery stalk
- 3 garlic cloves, minced
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp rosemary
- 1/4 cup olive oil
- Your desired amount of onions, bell peppers, and celery
- Salt and black pepper
- Optional: 1/2 cup of turkey broth
Directions
- Combine all ingredients, except the turkey broth, into a large mixing bowl.
- Roll mixture into meatballs.
- Add meatballs into a large skillet with olive oil on medium heat.
- Cook approximately 5-7 minutes per side until browned on all sides.
- Once cooked, add the turkey broth. Cover and simmer until meatballs are fully cooked.
- Serve meatballs on a plate or skewer.
Kale Caesar Salad
Ingredients
- Your desired amount of:
- Romaine lettuce
- Kale
- Shredded Brussels sprouts
- Green and/or purple cabbage
- Radicchio
- Parmesan cheese
- Caesar dressing
- Croutons
- Salt and black pepper
Directions
- Combine all ingredients in a large bowl, mix, and serve.
